Charlene Richard’s Sweet Potatoes - Barbara Seng

1 tsp vanilla                                         
½ tsp cinnamon
2 cups mini marshmallows               
6 med sweet potatoes, peeled and cooked    
1 can ready to spread coconut almond frosting

Mash sweet potatoes, mix with frosting, vanilla and cinnamon.  Spoon into greased casserole dish and bake at 350º for 20 minutes.  Top with marshmallows and bake another 5 minutes or until lightly browned.
