Chocolate Waffles - Charlene Fletcher

1½ cups flour                                      
¼ cup cocoa
1 tsp baking powder                           
1 tsp baking soda
cup sugar                                         
2 cups buttermilk
½ cup veg. oil or melted butter         
2 large eggs, separated
1 tsp vanilla extract                           
Pinch cream of tartar
1 cup chopped pecans (optional)

Sift together flour, cocoa, baking powder, baking soda and sugar.  Make a well in center of sifted dry ingredients.  In separate bowl, mix buttermilk, oil, egg yolks and vanilla.  Pour into dry ingredients, mixing just until combined.  Beat egg whites with cream of tartar until soft peaks form.  Fold into batter, 1/3 at a time.  Fold in pecans (if used).  Bake in preheated waffle iron according to manufacturer’s instructions. You can substitute walnuts for the pecans or omit the nuts. (Atlanta Journal-Constitution, March 30, 2000)
