Date Nut Bread - Barbara Seng

2½ cups dates, chopped                    
4 cups flour
1 tsp baking soda                                               
2 tsp baking powder
2 cups hot water                                 
½ tsp salt
2 eggs                                                    
1 tsp vanilla
2 cups sugar                                         
1 cup chopped nuts

Mix hot water, dates and soda together.  Beat eggs until very light, then beat in sugar, salt and vanilla.  Add to date mixture and stir in flour and baking powder until well mixed.  Stir in nuts.  Spread in well greased 9” loaf pan and bake at 350º for about one hour.
