Date Raisin Oatmeal Squares - Mark Seng

Filling:
1 cup snipped, pitted dates                               
1 cup raisins
1 cup water                                          
dash salt
1 tbsp lemon juice                              
¼ cup brown sugar, packed
1 tsp flour                                             
1 tsp vanilla                                         
1 cup chopped walnuts

Dough:
¾ cup soft butter                                
½ tsp baking soda
¾ cup brown sugar, packed              
1½ cups quick rolled oats 
1 tsp vanilla                                         
2 cups flour

Make the topping in a medium saucepan by combining dates, raisins, water, salt, lemon juice, brown sugar, and flour.  Cook, stirring occasionally for 10 minutes or until thickened.  Remove from heat.  Stir in vanilla and chopped walnuts.  Set aside to cool.  Cream butter and brown sugar until blended.  Add vanilla.  Stir together flour, baking soda, and oats.  Add to creamed mixture and mix thoroughly with hands.  Press half of mixture into greased 13x9x2 in. baking pan. Spread with filling.  Top with remaining oatmeal mixture.  Bake at 350º for 35 minutes or until browned.  Cool on wire rack, then cut in 24 squares.
