Diane’s Homemade Southern Barbecue - Charlene Fletcher

(This is the barbecue we made at the Fletcher Family Reunion in 1997 in GA.  I haven’t been able to find another version better for homemade BBQ)

1 large onion, finely chopped           
2 cloves garlic, minced
1½ cups catsup                                   
¼ cup Worcestershire sauce
2 tsp dry mustard                                               
2 tsp chili powder
2 tsp brown sugar                               
¼ cup vinegar
2 tsp salt                                                               
5-7 lbs chuck roast, pork or chicken

Mix in a large heavy pan or dutch oven all ingredients except meat.  Heat until warm on the stove.  Add meat.  Cover and cook on low for at least 1 hour per pound.  When the meat is done well it will naturally shred.  After shredding all the meat, stir it back into the sauce mixture the meat was cooked in.  Serve on buns or Texas Toast.
