Fudge Truffle Cheesecake - Michael Fletcher

2 cups semi sweet chocolate chips                  
4 eggs
3 pkgs 8oz cream cheese, softened                 
2 tsp vanilla
1 14oz can eagle brand milk                             
9 inch graham cracker crust

Heat oven to 300º.  In heavy sauce pan, over very low heat, melt chocolate chips.  In large mixing bowl, beat cream cheese until fluffy. Gradually beat in milk, add melted chocolate chips and remaining ingredients.  Mix well.  Pour into prepared 9 inch spring form pan, which has the graham cracker crust already firmly molded to the bottom.  Bake 1 hour and 5 minutes until center is set. Cool and chill, top with whipped cream and shaved chocolate.
