Guacamole - Michael Fletcher

(We love this, its fresh, its tangy, its better than ANYTHING bought in the stores!…the kids help me devour this when we have a Saturday afternoon movie session and snacks)

3 med Haas avocados                      
1 medium onion, chopped
2 cloves garlic                                      
2 tomatoes, seeded
1 fresh bunch cilantro, chopped      
1-2 limes
3 tbsp salt
 
Make sure you use ripe avocados.  Don’t use the large smooth skinned avocados as they don’t have as much flavor.  Remove the skin and pits from the avocados and mash the meat in a mixing bowl.  Its okay, almost preferable, to leave this slightly chunky.  Chop the onion and tomato.  Remove stems from the cilantro and chop the leaves finely.  Crush and mince the garlic.  Add garlic, onion, tomato, and cilantro to avocado mash.  Stir gently.  Roll the limes, slice and add the juice of the limes and salt to the mixture.  Stir gently but mix thoroughly.  Serve immediately with tortilla chips.  This mixture does not save well in the fridge as the guacamole will turn dark green or brown.
