1½ cup boiling water
1 cup quick oats
1 cup brown sugar
1 cup granulated sugar
½ cup butter (softened)
2 eggs
1½ cup flour
1 tsp baking soda
1 tsp cinnamon
½ tsp salt
Combine
oats and water
into small bowl, set aside. Cream sugars,
butter and eggs together in large mixing bowl with electric
mixer. Add dry ingredients and beat
well. Add softened oatmeal and beat just
until blended. Bake in well greased
bundt pan at 350 for 40 minutes (Can
also bake in 9 x 13, but I prefer bundt). Allow to cool in pan, 10 minutes Loosen
from side and flip onto cake plate.
Sprinkle with powdered sugar just before serving. Serve warm or cooled.
