oil
½ cup chicken broth
salt and pepper
¼ cup celery, chopped
¼ cup green pepper, chopped
2 tbsp onion, minced
¼ cup rice, uncooked
Brown
cut pork in a
little oil and season with salt and pepper.
Add celery, green pepper and onion. Sauté until vegetables are tender but not
brown. Stir in uncooked rice and chicken broth.
Bring to a boil, cover and simmer until rice is done and liquid is
absorbed. Add a little more chicken
broth if necessary to cook the rice.
Fluff rice with fork and serve.
