1 cup mashed potatoes
½ cup lukewarm potato water
1 cup scalded milk
⅔ cup shortening
2 eggs
1½ tsp salt
6-8 cups flour
½ cup sugar
Scald
milk and set
aside to cool. Boil potatoes until tender, drain water reserving ½ cup in
small bowl and allow to cool to 105º-110º.
Mash potatoes and add shortening, sugar, salt and eggs. Cream well.
Dissolve yeast in warm potato water, add lukewarm milk and then add to
lukewarm potato mixture. Add flour to
make a stiff dough. Toss on floured
board and knead well. Put into large
greased bowl, cover and let rise in warm place until doubled in size. Knead lightly, return to bowl, cover and
refrigerate until read to use. Pinch off
dough in needed portions, let rise until light.
Bake at 400º for 15-20 minutes. Butter
tops when removing from the oven.
