Pumpkin Bread - Barbara Seng

1 cup sugar                                          
½ cup brown sugar                             
1 cup canned pumpkin                     
½ cup oil                                               
2 eggs                                                    
2 cups flour                                          
1 tsp baking soda                                               
½ tsp salt
½ tsp nutmeg
½ tsp cinnamon
¼ tsp ginger
1 cup raisins
½ cup chopped nuts
¼ cup water

Combine sugars, pumpkin, oil and eggs.  Beat until well blended.  Stir in flour, soda, salt and spices, mix well.  Stir in water, raisins and nuts.  Spoon into a well greased 9” loaf pan.  Bake at 350º for 60-70 minutes or until toothpick in center comes out clean.  Cool thoroughly before slicing.
