Refried Beans - Barbara Seng

2 cups water                                        
8oz dried pinto beans (1¼ cups)
1 medium onion, chopped                
1 clove garlic, minced
1 tsp salt                                                               
3 tbsp shortening or oil

Heat water, beans, onions and garlic to boiling in a saucepan.  Boil 2 minutes.  Remove from heat, cover and let stand 1 hour.  Add just enough water to cover beans, add salt.  Heat to boiling; reduce heat. Cover and simmer, stirring occasionally, until beans are tender, about 1½ hours. (Add water during cooking if necessary)  Drain beans, mash, and add shortening or oil until completely absorbed by mixture.
