Zucchini Bread - Barbara Seng

2 cups grated zucchini                       
3 cups flour
1 cup oil                                                
½ tsp salt
2 cups sugar                                         
½ tsp baking powder
1 tbsp vanilla                                       
1 tsp baking soda
3 eggs, beaten                                      
3 tsp cinnamon
½ cup chopped nuts

Mix zucchini, sugar, oil, eggs and vanilla.  Stir in dry ingredients until well blended and then stir in the nuts.  Pour into a well greased loaf pan and bake at 350º for about an hour.
